The slow-growing Devon Speckle chickens, reared by Jason Wise of the Ark Chicken Company, are housed in movable 'ark' shelters and have 24-hour access to the fresh pastures of his farm in Silverton near Exeter. Jason also goes to the lengths of slaughtering them in their sleep to avoid stress, so the birds provide a distinct flavour and unique texture that makes Ark chickens taste the way chickens used to taste.
